Homemade granola balls/bars

1 1/4 cup oats
1/2 cup peanut butter
1/3 cup honey

Can also add raisins, mini chocolate chips, dried cranberries...

Mix ingredients, Make into balls. Put in greased mini muffin tin. Put in refrigerator for 20-30 minutes. Can also press down to make granola bars. Healthy yumminess!

Grilled pizza pockets

1 batch homemade or store bought crust
tomato sauce
toppings
cheese

Divide the crust dough into small balls. Roll it out on a lightly floured surface.
Add sauce to each, along with whatever toppings.
Sprinkle some cheese on top, then fold the dough over the toppings and pinch the edges together.
Grill over indirect heat (top rack if you have one) for 8-10 minutes, or until the dough has cooked through and cheese has melted.

Easy, delicious, and keeps your kitchen cool!

Bubble Up Pizza


Ingredients:

  • 2 containers refrigerated biscuit dough, 6 biscuits each (I used Pillsbury)
  • 1 jar pizza sauce
  • 2 cups shredded mozzarella cheese, divided
  • 1 cup pepperoni (or other favorite toppings)
  • 5 fresh basil leaves

Preparation: Preheat oven as per directions on dough. With a sharp knife, divide each biscuit into 4. In a large bowl, combine diced biscuit dough, sauce, 1 1/2 cups cheese and toppings. Stir to combine.

Pour mixture into greased oven safe skillet or 9×13 baking pan. Chiffonade the basil and sprinkle on top along with remaining cheese. Bake according to directions on dough, checking to make sure dough is cooked through and cheese is bubbling (I always bake mine for an additional 5 minutes. Let cool 5 minutes before serving.

I didn't have any toppings to use, so I just had cheese pizza, but it was still really good. I also didn't bother with chiffonading any basil on top. However, I did bake it a bit longer like the recipe suggests.

Crockpot Chicken and Dumplings

4-6 boneless skinless chicken breasts 
2 tablespoons butter 
2 cans cream of chicken soup 
1 can chicken broth 
1 onion diced
1 tablespoon dried parsley (I didn't have parsley, so I used celery flakes)
4 or 5 grands flaky refrigerator biscuits



Put the chicken, butter, cream of chicken, chicken broth, parsley and onions in the crock pot and cook on high for four to six hours.
As the chicken cooks and gets tender, break it up with a spoon or fork.
Get your biscuits and cut them into nine pieces. Stir into chicken mixture and cook for another 30 minutes to 1 hour.

**It was very tasty! Adam liked it, I liked it and Jacob liked it. Emily ate it with a bit of encouragement, and Clare ate the chicken but wasn't a fan of the "dumplings."

Dark Chocolate Peppermint Toffee

Here's my adaptation of the previous toffee recipe.

1/4 lb (one sleeve) saltines (the salted ones)
1 cup brown sugar
1 cup butter
1 package dark chocolate chips
Chopped candy canes

Preheat oven to 400-degrees. Line a jelly roll pan with parchment paper (the pan needs to have a lip to it or these things will leak all over your oven.) Place saltines in pan, salted side up. Leave just a bit of space between crackers so the toffee will encase the entire cracker when done.
Bring sugar and butter to a boil in a saucepan. Boil for 3 minutes (time the boiling after the whole thing starts boiling, not just the edges). And, resist the urge to stir it.
Pour boiling mixture over crackers. Place in oven for 5 minutes.
Top with chocolate chips. Then, put back into the oven for 1 minute.
Use spatula to spread the chocolate chips (which have melted). Top with candy cane pieces. Place in freezer for at least 1 hour. Once these are set, crack them into individual pieces.

Meatball Nirvana

"Parmesan cheese, Worcestershire sauce, and red pepper flakes combine to make the perfect meatball."
Ingredients:
1 pound extra lean ground beef
1/2 teaspoon sea salt
1 small onion, diced
1/2 teaspoon garlic salt
1 1/2 teaspoons Italian seasoning
3/4 teaspoon dried oregano
3/4 teaspoon crushed red pepper flakes
1 dash hot pepper sauce (such as Frank
's RedHot®), or to taste
1 1/2 tablespoons Worcestershire sauce
1/3 cup skim milk
1/4 cup grated Parmesan cheese
1/2 cup seasoned bread crumbs
Directions:
1. Preheat an oven to 400 degrees F (200 degrees C).
2. Place the beef into a mixing bowl, and season with salt, onion, garlic salt, Italian seasoning, oregano, red pepper flakes, hot pepper sauce, and Worcestershire sauce; mix well. Add the milk, Parmesan cheese, and bread crumbs. Mix until evenly blended, then form into 1 1/2-inch meatballs, and place onto a baking sheet.
3. Bake in the preheated oven until no longer pink in the center, 20 to 25 minutes.

2 1/2 cups semi-sweet chips
1/3 cup peanut butter
Chopped M&M’s (I used peanut ones.)
Preheat oven to 400-degrees. Line a jelly roll pan with parchment paper (the pan needs to have a lip to it or these things will leak all over your oven.) Place saltines in pan, salted side up. Leave just a bit of space between crackers so the toffee will encase the entire cracker when done.
Bring sugar and butter to a boil in a saucepan. Boil for 3 minutes (time the boiling after the whole thing starts boiling, not just the edges). And, resist the urge to stir it.
Pour boiling mixture over crackers. Place in oven for 5 minutes.
Put dollops of peanut butter on top and return to the oven for 1 minute.
Spread melted peanut butter over mixture with spatula and top with chocolate chips. Then, put back into the oven for 1 minute.
Use spatula to spread the chocolate chips (which have melted). Top with M&M pieces. Place in freezer for at least 1 hour. Once these are set, crack them into individual pieces.
